Sauer winery and wine shop: clay, wine and sustainability in Landau

For the love of grape juice and the environment

In the southern Palatinate, in Landau-Nussdorf, is the Sauer Winery and Wine Bar, opened in June 2021. More than a place to taste wines, it is a space where architecture, sustainability and winemaking tradition come together.
The Sauer family, a pioneer in organic viticulture since 1987, cultivates 33 hectares with varieties such as Pinot, Riesling, Sauvignon Blanc and Gewürztraminer, always under principles of respect for the environment, biodiversity and controlled yields. The wine bar is, in this sense, the natural extension of that philosophy.

Ecological architecture with a soul of clay

The building was designed with natural materials: wood, glass and, above all, clay, which gives character and comfort to the whole. One of the most notable elements is the WEM water-panel heating system, integrated into clay ceilings. This system makes it possible to generate radiant heat in winter and to cool the spaces in summer with minimal energy consumption, without draughts or excess humidity.
In the pressing room, the craftsmen of Glück GbR Lehmbau built a 3.5-metre ClayTec rammed-earth wall that acts as a climate wall for the wooden wine barrels. In the shop, seminar room and office, another three-metre wall provides a natural and robust finish. In total, 128 tonnes of rammed earth were used.
The remaining walls were finished with the YOSIMA Design Coating, while for acoustic insulation Mineral 20 clay plaster was used, applied in three layers in the characteristic “Black Forest Style”, rough and expressive.

Sustainability inside and outside the vineyard

The Sauer family’s commitment to sustainability is not limited to Germany. Since 1998 they have also run Bodegas Palmera in Utiel-Requena (Spain), where they produce organic reds of great character from century-old vines, in an environment as demanding as it is authentic.
